“Prova” Taste is a new establishment that has opened recently, it sits between “Ribeira” and the city centre of Porto. The idea behind this place occurred logically, since Portugal is commonly known for its wine production. As the name suggests you can “Taste” the different wine producing regions of Portugal all in one place. With various options at your disposal this journey is endless, depending on the size of your wallet, obviously.
The concept that Diogo Amado, the guide, has created is interesting because he is fostering a platform where you can literally taste different regions of Portugal, compare them, and figure out which ones interest you most. There is a large selection of wines from different regions, therefore there is a lot to learn about Portuguese wines and Diogo can help you with this. There are several different casts of grapes for white and Red wine, they give a varied personality to the wine, as well as the ageing process involved and which materials are used within this process. On top of this you have the region in which the grapes are produced, which have climacteric implications, as well as the age of the vines and the blends of the different casts used. Therefore you can see that all these variables have implications on the final product and the only way you will be able to start appreciating these differences is with experience, the only way to do this is to taste.
Diogo has various ways to help you do this, by picking several wines from different regions and helping you to notice the differences, as well as giving you tips if you already have a particular region in mind. He also serves some snacks to help you accompany the wine, normally a regional cheese and/or smoked meats. The prices are varied and he has wines for every wallet, so depending on your budget you can ask to find something within your price range. It is great that you can take your taste buds on a journey through the different wine producing regions of Portugal and Diogo is a great guide to help you be able to do this. If you trust him with your Taste buds you will not be disappointed.
